Kanetsune professional knives are made in Seki City, Japan, since 1963 and is named after a famous sword-maker from the Muromachi period.

“Forged Damascus blades made of White steel #2 core”.  This series is made with a special hardening technique that is called “松炭焼 MATSU-ZUMI-YAKI”. MATSU-ZUMI, Pine charcoal is an outstanding fuel for metal smelting because of its good fire-starting and maximum firepower. This hardening technique has the effect of preventing decarburization by pine charcoal, resulting in kitchen knives that are harder than usual. Therefore, the blade material of this knife is “SHIRO #2”, but the hardness is equivalent to “Blue steel #2”. This kitchen knife is a valuable kitchen knife made by a very skilled craftsman over 80 years old who has devoted his life to “越前打刃物 ECHIZEN-UCHIHAMONO”.
